Ingredients:
100g butter
175g caster sugar
225g self raising flour
1 teaspoon baking powder
2 eggs
4 tablespoons milk
2 ripe bananas
50g chocolate chips
How to make them:
Preheat the oven to 180oc/gas mark 4.
Cream your butter and sugar together for a few minutes. I like to use my kenwood mixer to do this but a hand mixer or a good ole wooden spoon will do the job too.
Add in the flour and the baking powder and mix until everything is mixed well.
Whisk in the eggs followed by the milk. You may need more or less milk, it all depends. Make sure that the mixture is nice and fluffy.
Mash the bananas in a separate bowl and add them with the chocolate into the mix.
Spoon the mixture into paper cases and bake them for about 25 minutes until well risen and golden brown.
When they're done leave them cool on a wire rack.
Sometimes i like to melt some chocolate and make a chocolate drizzle over the top but a dusting of icing sugar is good too.
